Top-Shelf Eats For Your Gold-Man Gala
The guests are on the way, you look like a million bucks, but don't tell us you're going to be serving fried chicken wings on Hollywood's biggest night! Here are a few special recipes from the gourmets at Bern's Steakhouse to spice up the soiree. Bon Appetite!
Truffle Crème Fraiche
3 cups Sour cream
4 ½ Tbsp Black truffle oil
3 Tbsp Chives
1 ½ Tbsp Parsley
1 ½ tsp minced black truffles
Salt and pepper to taste
Combine all ingredients. Mix thoroughly. Pair with your favorite potato chip.
Jumbo Lump Crab Cakes
Makes 16 2.5 oz crab cakes or can be used as a stuffing for fish or filet mignon. Can also be made smaller for parties.
For Aioli
12 oz salad oil
2 tsp lemon juice
5 egg yolks
Crab Mix
1 cup fresh aioli
3 Tbl cracker meal or very fine, plain breadcrumbs
3 Tbl fresh chives, minced
2 Tbl lemon juice
2 Tbl lemon zest, minced
1 tsp Old Bay seasoning
1/3 tsp cayenne pepper
1/3 tsp dry mustard
1 egg white
2 lb jumbo lump crabmeat, picked and cleaned
Kosher salt, to taste
Ground white pepper, to taste
Aioli; Place egg yolks in bowl of food processor and blend. With processor running add lemon juice and slowly add salad oil to mixture. When all is blended, reserve.
Crab Mix; combine next 7 ingredients in medium bowl. Whip egg white until soft peaks form and gently add to dry ingredients. After egg white and ingredients are blended, mix in aioli and gently fold in jumbo crabmeat.
For crab cakes, heat 1 tablespoon of butter in a large sautee pan on medium high heat and add crab mix with a regular ice cream scoop pan. Pan sear crab cakes in butter until light golden brown on the outside, flattening mixture with spatula as it cooks. Finish crab cakes in a 350°F oven for about 8 minutes.
For stuffing, prepare fish or filet and stuff with crab mixture.
